This simple and easy spaghetti squash recipe has amazing flavor and complements many entrées. We enjoy it along with grilled meats
Prep the Squash :
Place the squash half ( seeds removed) up-side-down in a microwave-safe deep casserole dish.
Add water. The water should come about 1/2 way up the squash.
Cover and microwave on high for 15 minutes or until a fork can be inserted easily
Remove from the microwave, drain and use a fork to gently pull the spaghetti strands out and place in a bowl. Tip: scrape from side to side not top to bottom
In 10 in heavy bottom skillet, heat the olive oil.
Add the onions and sauté for 1-2 minutes, then add squash, salt and pepper
Sauté for 10minutes or until squash is lightly browned.
Serve immediately.
