Once the oil is hot, add in the zucchini and sauté for 3-4 minutes, just until the vegetables soften and appear light brown around the edges. Season with a sprinkle of salt & pepper, Herbes, and a splash of balsamic vinegar.
2. Serve warm with stuffed peppers.
