NOTE: i can never find snow peas, so i just make it without. i increased the amt of bell peppers from 3 to 4 b/c of this.
chop or press garlic. let sit 5 minutes (for nutritional purposes).
heat broth over medium heat until steaming
add garlic & peppers. cover & saute 5 minutes
add snow peas. cover & saute 2 more minutes
add cashews, olive oil, & lemon juice and heat through, about 2 minutes
serve over rice with soy sauce
