Place flour in shallow dish. Stir in salt & pepper. Coat each filet with flour & shake off excess.
Heat large skillet (NOT nonstick) over medium heat for 3-4 mins. Add EVOO. Add fish & increase heat to high. Saute, shaking pan occasionaly, until bottom of fish is nicely browned, about 3 mins. Repeat on other side. Remove from pan and place in oven.
Deglaze pan with white wine. Cook, stirring over high heat until reduced by 1/3. Stir in butter.
Drizzle sauce over fish.
