Here's one for even the veggie skeptics. Beet greens or chard are superb this way, but you can also use a bag of pre-chopped kale. It may seem like a lot of greens, but they cook down.
Heat oil. Add garlic for 30 seconds. add greens, sprinkle with salt. Saute until greens are coated with oil, about one minute. Cover and allow greens to steam, about one minute. Remove lid and continue to saute until greens are wilted but still bright green in color. Chard and beet greens will finish faster than kale or other hearty greens
