Start to finish in 30 minutes, this preparation of sea bass has its roots in Portugal.
Cut the sea bass fillets into 3-inch portions. Look for fillets at least an inch thick for best results. Heat the oil in a large skillet over medium heat. Add the garlic and cook for 1 minute. Stir in all ingredients except the fish and cook for 5 minutes. Add fish and cook an additional 10 minutes, turning fillets half way. Spoon out the sea bass fillets onto a serving platter, and pour contents of the pan over the fillets.
