Spinach with a touch of sweetness from the raisins.
Use a LARGE saute pan or prepare in smaller batches.
Cover bottom of saute pan with olive oil and heat over medium to medium-high.
When hot, add minced garlic (be careful) and saute for about 30 secs.
Add pine nuts and raisins and saute for another minute or so.
(Note: The raisins will swell up and the pine nuts should turn golden brown)
Add large handfuls of spinach and saute until wilted, turning with large tongs.
Don''t overcook the spinach or it just becomes mush...and what kid wants to eat that?
Season with sea salt and fresh ground pepper as desired.
Enjoy.
Spinach will cook WAY down so don't think that you are doing too much.
