Here is how to make Sauteed Zucchini and Yellow Summer Squash. This is a tremendously simple way to turn fresh garden vegetables into an eye-catching and colorful accompaniment to almost any meal!
In a medium-sized skillet, melt 1 tablespoon butter or margarine. Add zucchini and yellow summer squash slices. Sprinkle with salt and pepper to taste. Sprinkle with 1 teaspoon sugar. Saute over low heat, until squash is translucent, but not mushy, about 7 or 8 minutes. Remove from pan to a tray covered with paper toweling to absorb any excess butter or margarine. Serve in a clear bowl to show off the contrasting green and yellow colors of the squash. This is a beautiful side dish that is healthy and super easy to make! And, it is subtly sweet and tasty!!!
