Component of GRILLED DOUBLE CUT BERKSHIRE PORK CHOP
1. Bring 2 1/2 quart of water to a boil and keep warm. Add 4 tablespoons of chicken base.
2. Set oven to 350. Toast the ciabatta bread in oven.
3. Saute onions, leeks, apples, and ham until translucent in color.
4. Add brown sugar and apple cider, reduce until almost dry.
5. Add thyme and dry fruits and set aside.
6. In a large bowl, mix bread with the vegetable and dried fruit mixture, vegetable stock, and eggs.
7. Mix well and put in a hotel pan. Cook in oven at 350 degrees for 35 minutes. Turn hotel pan and cook for another 10 minutes.
8. Let cool to room temperature.
