A mouth-watering, satisfying stew. The Concord Foods seasoning mix is excellent; no other seasonings are necessary. If you want to use my stand-by meatball recipe, it's here at BigOven ("Bestest Easiest Meatballs"), but I've also been known to use ready-made meatballs from Sam's Club. If you prefer, use ham, lean pork, or no meat at all.
Combine vegetable broth and greens seasoning in a large pot. Bring to a boil and add kale. Cover and reduce heat. Simmer for half an hour or longer, until kale is tender enough for your liking (kale will vary, as will people's tastes). Drain kale in a colander and discard liquid (or freeze it if you like; you can use it for soup stock if you don't mind a very kale-flavored veggie broth).
In the same pot, heat olive oil. Add tomatoes and mash with a wire whisk. Simmer about 5 minutes, stirring frequently and adding a little of the chicken broth if necessary. Add the rest of the chicken broth, potato, kale, and meat if using. Bring to a boil. Reduce heat and simmer 1 to 1 1/2 hours, adding water as necessary for desired consistency.
