First, to make the salad dressing, combine the lemon, garlic, oil vinegar, honey, salt, and pepper and whisk. Set aside and prepare kale.
Thoroughly wash and dry the kale. Strip kale from the veins of the leaves and toss the veins. Slice into fine strips.
Using your hands, massage a few tablespoons of the dressing into the kale. Continue adding dressing until there is a light layer of dressing massaged into the kale. This softens the kale texture. Now mix in the walnuts and cranberries and let set for 20 minutes. Before serving toss in the cheese and enjoy.
