A floury omelet or eggy pancake laced with some of your favorite savory ingredients.
Chop 2 scallops, 1/4 onion, 1/4 cup of parsley or enough to place a sprinkling on 8 small pancakes. Set aside. These ingredients will be added while the egg/flour mixture are cooking on the first side. Beat an egg and flour until smooth and thick enough that the batter does not run in the shallow frying pan. You may need to add more flour to achieve this but only in 1/2 tablespoon increments. Heat a shallow frying pan on medium heat with enough oil to fry each mini-pancake so they do not touch. While cooking on the first side sprinkle each with a pinch of each of the additional ingredients; scallop, onion, parsley, chile, and salt. Flip the pancake when golden to continue cooking on the second side. Each side will take a few minutes. Plate and sprinkle with salt to taste and a few drops of lemon on each mini-pancake. Shrimp can be substituted for the scallops. Other savory fillings that you can try are cooked spinach and curry powder garnished with unsweetened yogurt, fresh green peas with chopped mint and chopped shallots, roasted chopped red peppers with cumin and garnished with lemon, or cleaned peeled shrimp with a splash or two of soy sauce and sesame oil and then garnished with cilantro and lime juice.
