Sweet and Savory Pumpkin Bundles
(Makes approximately 24 bundles)
Ingredients:
24 wonton wrappers
Cooking spray, of your choice
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
1/4 cup brown sugar (light or dark)
1/2 teaspoon dried sage
1/2 teaspoon orange zest
Pinch cayenne pepper
Pinch grated nutmeg
1/4 cup seasoned Panko breadcrumbs
Fresh sage (optional)
Directions:
Preheat your oven to 350ºF. Using a mini muffin tin, line each insert with a wonton wrapper. The wrapper will overlap the edge of the insert; arrange the sides to fit into the tin (The sides of the wrapper should be standing upright). Once all of the inserts have been filled, lightly spray the wrappers with cooking spray. Bake the wonton wrappers for approximately 5-7 minutes, until their edges start to brown. Remove from the oven, and allow to cool. Change the setting on your oven to broil.
Meanwhile, prepare the filling. In a large mixing bowl, combine the cream cheese, pumpkin, brown sugar, dried sage, orange zest, cayenne pepper, and nutmeg. Thoroughly mix all of the ingredients, eliminating any lumps from the cream cheese.
Transfer filling to a pastry bag or use a small spoon to fill each of the cooked wrappers with a generous amount of the pumpkin cream cheese mixture. Set aside.
Spread the panko breadcrumbs onto a baking sheet. Place them under the broiler for approximately 2-3 minutes to toast. Remove from the oven. Top each of the filled wontons with a sprinkle of breadcrumbs and a piece of fresh sage, if desired. Serve immediately.
