An impressive, but easy casserole to be enjoyed at a family gathering. Kids love it!
Prepare mashed potatoes. Use milk, Velveeta Cheese Product and ¾ stick of butter (reserve ¼ stick of butter) in the preparation of the mashed potatoes. Salt to taste. The potatoes can be stored until the next day in the refrigerator or you can use leftover potatoes, if desired. Using a large skillet, add remaining ¼ stick of butter, carrots, celery and onion. Simmer until the onions caramelize. Add the ground turkey and apple juice. The apple juice adds flavor and sweetness. Cook thoroughly. Add sloppy joe seasoning package and a can of tomato paste. Add water as needed and simmer for 10 minutes or more. Layer the meat mixture in a large casserole dish and top with the mashed potatoes. Cool to room temperature. Store in the refrigerator until an hour before dinner. Preheat oven to 400°. Bake for 45 minutes.
Serving suggestion: Enjoy with fresh green beans, dinner rolls and a garden salad.
