An herby take on a classic Italian side dish
Coat a large pan with olive oil over medium heat. Toss in herbs and heat until fragrant (about 1 minute.)
Stir in tomatoes and beans, season with salt and pepper to taste and simmer covered for 15-20 minutes.
Toss in chopped prosciutto before serving (optional.)
A vegetarian option is adding chopped kale before simmering.
