Love to serve this with ham. The only scalloped pineapple recipe I've ever seen without bread. Love it this way.
Drain pineapple juice, reserve juice and set aside. Blend sugar with flour. Beat egg in saucepan. Add sugar and flour to egg. Blend in pineapple juice. Stir over medium heat until thick. Remove from heat and stir in cheddar cheese, stirring til melted. Blend in pineapple chunks. Poor into a greased 1-1/2 quart casserole. Bake at 325 degrees approx. 30 minutes or until golden. Serve with ham or as a dessert. Can be prepared ahead of time and then baked.
