great side dish with ham
Parboil the potatoes and onions for a few minutes to partially cook them. Them put into a greased pan and make a white sauce by melting the butter and adding the flour. Add milk to mixture and cook until thickened. Add velveeta cheese to this mixture, add as much or as little as you would like. I then add a little extra milk because the cheese mix. thickens as it cooks. (but don't make it too runny). Pour over potato es and add a little green pepper or pimento for color. Bake at 350 for about hour or until bubbly and golden.
