put a tub of onion and chive cream cheese, 2 cups of chicken broth, and 1 cup of milk in a sauce pan. Bring to a boil whisking constantly.
Slice up about 12 potatoes quarter inch thick. Slice up 1 onion thin. Crumble up about 10 slices of cooked bacon....
Layer half the potatoes, bacon and onion and repeat with a second layer. Add a little salt and pepper to each layer. Now, pour the cream cheese mixture over the top.
Cover and bake at 400 for an hour and a half . Top with 1 cup of shredded colby jack and cook for another 10 minutes.
