Pan seared with bacon and lemon juice. Quick and tasty!
1. Cook up bacon and then chop it up
2. Dry scallops with paper towels. Season with salt and pepper
3. Heat a large skillet until VERY hot, add olive oil and immediately add scallops. Sear on high heat 3-4 minutes on each side.
Remove from skillet.
4. Add lemon juice, more white wine, scrape bottom of the pan.
5. Remove from heat. add softened butter (not melted) - to create a creamy sauce. Add chopped bacon. Add back scallops. Stir to coat scallops then serve in shallow glass bowl.
