2. Add mushrooms and sweat.
3. Add asparagus, cook 1 min. Add sherry, set aside.
4. Heat oil in separate pan.
5. Season scallops and sear.
6. Add remaining butter halfway.
7. Portion mushrooms and asparagus on plates, top with scallops.
8. Sprinkle with parmesan cheese and parley.
