Gather three medium sized pie plates or bowls.
In bowl one, place: Flour, 1 teaspoon salt, Black pepper. Mix well with whisk or fork.
In bowl two, place: Eggs and Milk. Mix well with whisk or fork.
In bowl three, place: Panko crumbs and Paprika. Mix well with hand.
Dredge each piece of meat through the flour, dip in the egg mixture and coat well with the Panko. Pile high on a plate. This step cuts down the stress of breading while cooking.
Heat half of the oil in a large skillet set to medium-high heat (between 6 and 7 on the numeric stove top dials that go to 10). The oil is ready when you drop a few drops of water in and they crackle loudly.
Cook the coated chops for 3-4 minutes on each side in an uncrowded pan until golden brown. Pull from pan and set on a plate lined with paper towels to help absorb oil. Add oil to the pan as needed.
For the sauce: In a small saucepan, heat the chicken stock until it comes to a boil, then lower the heat to a simmer. In a bowl, combine the sour cream, salt and dill. Whisk thoroughly until well blended. Remove 1/4 of the hot stock from the pan and whisk it into the sour cream mixture. Once well blended, add the sour cream mixture to the sauce pan with the remaining stock. Whisk until well blended and let simmer for roughly 5 minutes, whisking often. Sauce will thicken slightly over time.
Breading before starting the oil is a serious time saver and stress reducer. You don't want to be running back and forth between your breading station and your cooking meat.. One of the two will suffer.
