Thin crape style pancakes - great with sugar/cinnamon sprinkled on top and rolled up.
Beat the eggs, add the milk, vanilla and melted Crisco in medium size mixing bowl.
Add the sugar, salt.
Stir in the flour.
As with any pancake recipe, you don't want to beat the flour too much as it will become tough. Mom's original recipe said the batter should be thin and lumpy.
I never liked having lumps in mine, so I would use a strainer to remove the lumps.
Make sure the griddle is thoroughly and evenly heated to about 300 degrees. Use a little Crisco to grease the griddle then pour on the batter.
Quickly, roll the griddle at different angles to spread the batter as thin as you can before it starts cooking too much. After about 1-2 minutes, flip the crape. DO NOT over cook. Cook it until some of the crape is light brown, then flip and be ready to remove after about 1 minute of cooking.
As soon as the crape is transferred to a plate, spread some butter and toppings, such as sugar/cinnamon or syrup, and roll up into a log.
Eat immediately - these are not as great once they cool down, but amazing when they are fresh.
Any left over batter can be made into a crape and frozen immediately. They are pretty good if you individually wrap each crape in saran wrap. When ready to eat one, place on plate and microwave for 1 minute. Not as good as compared to fresh but still pretty good!
