Preheat oven to 400ºF
Whisk together all dry ingredients in a large-bottom bowl. Cut shortening into the dry ingredients using a pastry cutter or two knives or simply combine in a food processor. Stir in eggs and yogurt until well mixed.
Add any flavorings. Scoop heaping tablespoonfuls onto a parchment-lined baking sheet, sprinkle with the cinnamon-sugar, and bake for 10-12 minutes, or until the tops are lightly browned and there are no uncooked portions peeking through. Do not overcook!
