A pastry treat. Light and not to dry. Difficult to stop at just one!
In large bowl combine flour, baking powder, sugar and salt. Mix thoroughly then cut in cold butter until mixture resembles coarse meal with a few slightly larger butter lumps. Stir in the dry fruit, flavoring and heavy cream with fork until dough begins to form , about 30 seconds. Transfer dough onto counter and knead by hand just until it comes together into a rough, slightly sticky ball (5-10)seconds. Half dough, and press into a circle(approx. 6 inches) and cut each into 6 triangles. Place triangles on an untreated baking sheet. Bake in 425 degrees oven for 12-15 minutes. Until light brown. Cool on wire rack.
When cooled drizzle with icing. Makes 12 scones
Icing: in a small bowl add approximately 1-1/2 cups powdered sugar and 1 capful of flavoring. Slowly pour a small amount of milk in at a time, stirring enough milk so icing is just thin enough to drizzle over scones.
Variations:
Dried cherries/Almond flavoring(after baking top with toasted almonds)
Dried Cranberries/Orange flavoring (add 1 Tbsp. Orange zest to dough)
Dried Blueberries/Lemon Flavoring (add 1 Tbsp. Lemon zest to dough)
