1. Mix flour, both sugars, vanilla, butter, salt, and egg until dough forms. Divide dough into halves. OPTIONAL Mix cocoa into one of the halves. Chill for 1 to 2 hours.
2. Heat oven to 350 degrees.
3. Sprinkle a surface very lightly with flour. Pat or roll each half of dough on the floured surface. Form into desired shape.
4. Bake cookies until edges begin to brown, 8 to 10 minutes. Let cookies cool slightly, then remove from cookie sheet with a spatula.
