1. Cook fish in butter over a medium heat in a large saucepan and set aside
2. Add all other ingredients to same saucepan and simmer gently (covered) for 30 min (stir regularly)
3. Add fish back in and simmer for further 5 minutes
Remove bay leaves and serve
Goes well with some crusty buttered bread
