This is the most amazing dish!
In a really big pot, drop sausage peices and sear over medium heat. Sitr often. Cook until heated through. Add ham stir for 10 minutes. Add peppers, celery, onion and garlic. Loosen and incorporate brown bits. Cook until translucent, 15 minutes. Add tomato puree and tomatoes. Blend. Pour in Broth and bring to a boil. Add thyme, bay, oregano, pepper flakes, basil and black pepper. Cook on very low for 1 hour. Add rice, cover and cook 15 minutes. Add shrimp, crab or optional oysters. Cook 5 minutes more. Adjust salt and pepper if necessary. Serve in large shallow bowls. Garnish with green onion.
You can use any combo of fish, chicken or vegetable stocks.
