A great dish for seafood lovers!
Cook the lasagne noodles according to package directions.
Cut up the haddock, shrimp and flounder and mix in a bowl with salt and pepper and the lemon juice. Set aside.
Melt the butter in a large saucepan. Cut the leeks in thin slices and add to the melted butter; cook for about 10 minutes until soft. Add the flour and continue to cook for about a minute, stirring until the flour mixture makes a paste. Gradually stir in the milk until a thick, creamy sauce forms. Add the honey and mozzarella cheese and continue to stir until it's all blended well. Remove the saucepan from the heat and add the seafood. Mix well.
Add a small coating of the sauce to the bottom of your lasagne pan. Then make alternate layers of lasagne noodles and fish sauce. Finish with a layer of fish sauce on top and add the Parmesan cheese to the top.
Bake at 350 degrees F for about 30 minutes then serve.
