This is a decadent seafood medley with lobster, shrimp and mussels.
Peel and devein the shrimp. Rinse mussels and shake around. Any mussels that do not close in a couple of minutes, discard. Rinse the lobster tails and carefully split tails lengthwise. Set the seafood aside in the fridge.
Finely chop the garlic cloves and parsley. Melt the butter in a large pot or Dutch oven over a low heat. After the butter is melted, add the red pepper flakes and stir around. Then add the garlic; stir together and cover for about 1 minute.
Add the lobster tails to the butter mixture. Stir to coat, replace the cover and let cook 2 to 3 minutes. Then add the shrimp; again, stir to coat, cover and cook another couple of minutes. When the shrimp are about half-way pink in color, stir in the mussels, cover the pot and let simmer for about 5 minutes.
By now, the butter has blended with all the natural liquids released from the lobsters, shrimp and mussels. Turn off the heat. Sprinkle in the parsley and stir everything together once more, making sure that all the mussels have opened up. If you see any that are still closed, discard them.
You can serve this decadent Seafood Scampi with a fresh tossed salad, over angel hair pasta or with a loaf of garlic bread. Also, be creative and switch up the seafood. Try it with scallops, fish and more!
