A delicious way to prepare any good white fish, we like Halibut
Mix tomatoes, shallots, garlic, parsley, 2 tablespoons olive oil, and 1/4 teaspoon ground fennel. Season with salt and pepper.
In a small bowl mix remaining fennel with 1/2 teaspoon salt and pepper. Rub this mixture over fish.
Heat a non stick skillet, add olive oil, then fish. Cook over moderately high heat until browned, flip fish add butter to pan, spoon over fish, continue cooking until fish is cooked.
Remove fish from pan, top with vinaigrette over fish. Serve
