Step 1: Cut away the ends of each grapefruit. Remove the skin and pith by cutting down the sides of the fruit. Slice each grapefruit horizontally into four or five thick rounds.
Step 2: Cut a square of cheesecloth. Wrap the ginger in the cheesecloth and squeeze over a bowl to extract juice. Measure out 1/2 teaspoon juice and mix with the maple syrup. OR: Add ginger paste to maple syrup to taste. (You should REALLY taste the ginger, or this is icky sweet.) Heat the syrup in a microwave until warm.
Step 3: Heat butter over medium high heat on a griddle until the foam subsides and the butter begins to color. Sear the grapefruit slices briefly on each side and remove to a platter. Drizzle on the ginger maple syrup and garnish with pomegranate seeds. Serve at once.
