Add the onions and cook for 5 minutes until well-browned and set aside. Mix together the fried onions with the rocket, parmesan, parsley, balsamic vinegar and rest of the olive oil. To serve:Place the lamb chops on a serving plate and top with the rocket and parmesan mix. NOTES : A simple, fresh and tasty salad to accompany lamb chops.
