Delicious Scallops
Season scallops with salt and pepper. Place olive oil in pan and sear over medium high heat.
Combine white wine vinegar, white wine, lime juice, and shallots and simmer over medium heat until the mixture has reduced to two table spoons. Add butter, one cube at a time, and stir until completely melted. One all butter is incorporated, add cilantro.
