Place softened butter in bowl - if the butter is still cold, use the microwave to soften.
Add all the ingredients to the butter - blend well.
Place the turkey or chicken in the cooking vessel. Pat the skin dry with paper towels.
Gently separate the skin from the breast meat of the turkey or chicken . Work slowly and carefully - try NOT to tear holes in the skin. Using a spatula or your fingers, spread the butter along the meat, under the skin covering as much area as possible. (Occasionally the skin will not easily separate or it gets difficult to spread the butter everywhere. When this happens smear all of the prepared butter in the middle of the breast, settle the skin back down and the message the butter to all the areas you can - covering as much of the breast as possible.
Bake your turkey or chicken! I will often pour a cup or two of Rose or White wine (dry or sweet - does not matter)in the bottom of the cooking pan. I let this mix with the cooking juices and the melted butter to use as a basting sauce. I baste every 20 minutes or so. This is totally optional. If the skin begins to darken before the meat is cooked - loosely tent the breast with foil.
*These measurements are what I use - ANY of these spices, or anything you choose to use for flavor can be added to the butter in any amount. The more spice used the heavier the flavor - the fat of the butter helps keep the meat moist and will help the skin to crisp us during cooking.
The butter is hard to spread over moist meat - when learning how to do this, it is ok to push most of the butter, if not all, into the middle of the breast and then use the skin as the "spreader" by pushing the butter around the breast with your hands on top of the skin rather than under it. This may help in preventing tears or holes in the skin.
