with mango slaw and lime rice
1. Bring 1 cup of water with salt to a boil in small pot. Once boiling, add rice, cover and simmer for 15 minutes.
2. Peel mango and cut into thin matchsticks; thinly slice red onion; zest and halve the lime; mince the serrano (remove seeds).
3. Toss together mango, half of onion, half of zest and juice of lime, up to half of the serrano, salt and pepper.
4. Toss steak in shallow dish with vinegar, large drizzle of oil, remaining serrano, salt and pepper.
5. Heat a drizzle of oil over medium-high heat; add steak and rest of onion and cook 4-7 minutes per side. Set before slicing.
6. Stir zest in rice; place rice on plate and top with sliced steak and mango slaw.
