Chop chicken into bite size chunks. Heat oil in skillet. Brown chicken in oil. Remove chicken. Saute remaining ingedients (except cornstarch) heat until blended. Add chicken and heat mixture until boiling. Reduce heat and simmer @ 15 minutes. Add cornstarch as needed to thicken. Serve over rice.
