Heat oil in a medium saucepan and saute vegetables, add garlic and spices. Stir in tomatoes and simmer 5 min.
Make small wells in the tomato mixture and crack eggs into the wells. Cover and simmer about 8 min until eggs are soft poached.
Serve with fresh cilantro and parsley
