in mixing bowl pour warm water (115-119) degrees. Add sugar, shortening and yeast. Add potatoes if using and flour, knead about 2 minutes and then add the salt, knead about 10 minutes more. Should be satiny without being sticky. Let rise about 15 min, form into rolls and bake at 375 for 20 minutes.
you can't really overmix bread. Make sure it is not to stiff. This sounds weird but if you touch it with your finger dough should form a circle with a hollow center on your finger
