Great lentil soup. Can be made vegetarian easily by substituting vegetable stock.
Saute onion, shallot, pepper, carrots and garlic in oil until tender. Add prosciutto and saute briefly. Add celery seed, lentils, Rotel, tomatoes, chicken stock and basil. Bring to boil, reduce heat and simmer partially covered until all is tender (about 45-55 minutes). Puree 1-1 1/2 cups in blender. Return to pot. Add parsley and flour wash. Stir and boil for 1 minute. Salt and pepper to taste.
Soup is good the same day it's made, but even better after a day or two in the refrigerator.
* If you can't find Rotel Italian tomatoes, you can substitute any canned Italian tomatoes, but add 1/4 to 1/2 tsp of red pepper flakes for a little kick.
For a vegetarian version, Prociutto can be eliminated and vegetable stock may be substituted for chicken stock.
