Prep ingredients: cut chicken into 1/2 inch thick strips and slice peppers and red onion into 1 inch strips.
In a small mixing bowl, combine smoked paprika, onion powder, chili lime seasoning, and lemon pepper.
In a large mixing bowl, toss chicken, onion, and peppers with 1 tbsp of olive oil, lime juice and zest. Then mix in fajita seasoning and garlic.
Add fajita mixture to an olive oil coated sheet pan or 10-12 inch oven safe baking dish. Top with more lime juice and zest if desired. Bake for 15-20 minutes or until chicken is cooked through. Broil on high for an additional 3 minutes.
To serve: place fajita mixture inside lettuce wraps and garnish with cilantro if desired.
