Simple recipe ready in 20 minutes that gets the best of roasting vegetables
1. Line a sheet pan/baking tray with foil and spray/drizzle with oil
2. Peel and chop up sweet potato into small cubes (the smaller the faster they cook)
3. Wash mushrooms and cut up if bigger
4. Place chicken breast, mushrooms and sweet potato cubes on the tray
5. Sprinkle each with salt and pepper, and a hint of cayanne pepper. Drizzle more oil over
6. Place in the oven on 180C (fan) for around 25 minutes, or until chicken is cooked
Use whatever spices you'd like, I personally recommend a generic spice mix. Works well with mayonnaise!
