Wash & peel the sweet potatoes (keep the peels for later). Slice them into 1/2" thick round slices. Boil them until tender (start w/ 15 minutes or so then check on them every 5 minutes until done), then drain.
While the sweet potatoes are cooking, combine all other ingredients in a saucepan over Med heat. Stir constantly until smooth & bubbly. Add the drained SP slices a few at a time and coat completely. Place in a casserole dish, spreading them out evenly. Pour any extra sauce evenly over the SP. If the dish is cool, put in oven to bake until heated & sauce is bubbly. Then evenly sprinkle the mini marshmallows on top to cover the SP and broil in oven for 1 minute (**Watch it closely so it doesn't burn!! Just until the marshmallows are golden brown & melted).
