Sherry's super rich, decadent mac and cheese.
Cook one pound of pasta and set aside.
In a large pot, melt 4 tablespoons of butter. Stir in flour to make a roux.
Slowly whisk in 2 cups of half and half and 2 cups of heavy cream. Whisk over low heat until smooth and thick.
Whisk in 4 ounces of cubed Velveeta cheese, 1/2 cup of mozzarella cheese, and 1 cup of Italian 5-cheese mix a little at a time until creamy.
Add 1/2 teaspoon of dried thyme and the cooked pasta. Stir until blended.
Pour into a greased casserole dish (11x14).
Put crushed crackers on top if desired.
Bake 30-40 minutes until bubbly.
