Our favorite hot wings are easy to make and spicy enough to please my fire eaters!
Wash chicken and dry with paper towels. Separate wings at joint and discard tips. Place wings in a large mixing bowl and season with cayenne pepper and seasoned salt, tossing to make sure all pieces are liberally covered. If you like them hotter, add more cayenne. Refrigerate for at least 4 hours to let wings dry out and the spices to marinate.
Preheat oven to 450?. Line a baking sheet with foil and spray with non-stick cooking spray. Place wings, skin side down on baking sheet, without crowding them. Use two baking sheets if necessary. Bake for 20 minutes, flip them, and bake for 20 minutes more.
While wings are baking, melt butter in saucepan. Add minced garlic and saute for 1 minute. Add hot sauce and keep warm while wings cook.
Remove wings from oven and immediately remove them to a large glass serving bowl. Pour hot sauce over and toss to evenly coat all pieces. Serve immediately.
