Combine olive oil, butter, lemon juice and peel, garlic, thyme, salt and pepper in small sauce pan. Bring to a boil and remove from heat.
Thread meats and vegetables on skewers. Grill over med high heat, basting with sauce until desired doneness. Remove the meat and vegetables from skewers into a warmed serving bowl, pour leftover sauce over and serve with hot rice.
A salad of cucumber, onion, feta, mint with lemon juice and of bit of garlic goes nicely with this dish.
