Prepare the Grits:
1. Mix grits, water, salt, heavy cream and butter in a saucepan and bring to a boil over medium heat.
2. Reduce heat to low, cover and simmer for 30 minutes, stirring often. Cook longer for extra creamy grits.
3. Add water to thin if necessary.
For grits griddlecakes:
1. Heat oven to 350 degrees F.
2. Mix cheddar cheese into grits. Lightly grease pan and spread grits in layer 3/8 inch thick.
3. Bake for about 30 minutes or until tops are lightly browned and crisp.
4. Cut out rounds and carefully lift out of pan with a spatula.
Cook the shrimp:
1. Pat dry. Season with 3S3P, paprika.
2. Heat a nonstick skillet on medium high. Melt 2 tablespoons unsalted butter.
3. When butter starts to sizzle, add shrimp and sauté for about 5 minutes, or until shrimp are pink and opaque.
Assemble:
1. Slice shrimp in half lengthwise.
2. Place shrimp on grits round.
3. Garnish with fresh chives.
