Created this recipe to satisfy shane's shrimp and grits craving.
Make cajun seasoning
Combine 2 tbsp creole seasoning, 2tbsp smoked paprika, 2 tbsp Old Bay, 1 tbsp Black pepper
For Grits:
Boil 3 cups of Chicken Stock and slowly stir in grits. Cover and cook per directions (depending on coarseness of grits).
Whisk in 2 tbsp butter, and 2 tbsp heavy cream. Season with salt and pepper. Add 2 cups smoked gouda and about 1/4 cup chicken stock as necessary to be smooth and creamy. Add more cream if necessary. Cover and set aside.
For shrimp.
Pan fry bacon in non stick skillet. Set bacon aside and add a drizzle of olive oil to pan. Add shrimp. Sprinkle generously with cajun seasoning. Cook shrimp until done on each side (about 3 minutes per side) and remove from skillet.
For Cajun gravy:
In same skillet you cooked the shrimp, add onions and bell peppers. Sauté a few minutes. Add tablespoon of butter and flour and mix all together to make pasty roux. Sauté a few more minutes. Add garlic and a squeeze of lemon juice and stir. Add 1.4 cup heavy cream and reduce heat from medium high to low. Add more cajun seasoning if necessary (careful not to make it too salty). Cook for a second and then add 3-4 tbsp chicken stock. Whisk together to thicken adding a little paprika to darken the sauce (1/4ish tsp).
To serve:
Place grits in bottom of bowl. Top with bacon and shrimp and add a drizzle of cajun gravy around edge. Sprinkle with chopped parsley and green onions and another squeeze of lemon. Can add another sprinkle of cheese if you want.
