Preheat oven to 350
Spray 9x13 baking dish with cooking spray
Mix together cream cheese, chilis, chopped shrimp and crab and mexican blend cheese.
Spread equal amounts of shrimp crab mixture onto each of the 12 tortillas and roll up burrito style.
Place rolled tortillas into baking dish, seam side down
Top with Enchilada sauce and Monterey Jack cheese
Cover and Bake for 30 minutes
Remove cover and continue baking for 15 minutes (I add some more cheese on top here, but the recipe doesn't call for that)
Top with sour cream and green onions and serve (optional)
I use an additional cup of monterey jack cheese to put on the top during the last 15 minutes, so if you want to do this, buy extra cheese
