I won First Place in the New Orleans Times Picayune recipe contest back in 1981 with this recipe. It's not low fat !
Preheat oven to 425.
Cook bacon till crisp. Drain
Cook onions and mushrooms in dripping till tender. Drain well.
Cook shrimp in skillet till just barely cooked. Set aside.
Combine bacon, cheese & flour. Toss well.
Beat eggs & milk together. Add nutmeg, celery seed, onion/mushroom mixture.
Put the bacon/cheese mixture in unbaked pie shell.
Pour egg mixture over. Top with shrimp.
Bake at 425 for 7 minutes then reduce to 325 and continue baking for 30-45 minutes until lightly browned and just set when knife inserted comes out clean.
Use Gruyere and any mixture of cheeses you like.
