Once the vermicelli’s done cooking, it comes together in only a few minutes, so be sure to have everything prepped and ready to go. The portions look bigger than they actually are, thanks to the clever trick of breaking the pasta into thirds before cooking it.
TIP *Toast pine nuts in dry skillet over medium heat, stirring constantly, or microwave 1 to 3 minutes or until lightly browned.
1. Cook pasta according to package directions. Add shrimp during last 3 minutes of cooking; cook until shrimp turn pink. Drain well.
2. Toss hot pasta, shrimp and all remaining ingredients except cheese in large bowl until spinach is slightly wilted. Serve topped with cheese.
